BleekeDillonCrandall just had our 1st Annual Cookie Bake-off and I am the winner. Not that I am gloating or anything!! I have to say I am very surprised because I am usually not the best baker in the world and have been known to throw all baking utensils in the trash after failed attempts. However, the baking fairies showed up for this one event and here I stand a winner. I know that you are sad that you did not get a chance to taste the cookies, but I will give you the recipe and you can attempt to recreate my masterpiece at home.
Crème De Mint
1/2 cup butter, softened
3/4 cup dark brown sugar
1/2 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
1 teaspoon baking soda
1 teaspoon baking powder
2 2/3 cups all-purpose flour
1 pkg. (10 oz.) Andes Mint Baking Chips
Preheat oven to 350 degrees. Move the rack one slot above the middle of the oven.
Mix together butter, sugars, eggs, vanilla, baking soda and baking powder. Stir in Andes Mints. Mix flour in. Chill for 1 hour.
Make 1 inch balls and then flatten slightly.
Bake for 8-10 minutes. Cool on sheets for two minutes, and then remove to wire racks to cool. Makes about 3 dz.
